Picking the right cabbage
The right type of cabbage is an essential part of the process.
You need to get a fresh pick, preferably from the farmer’s market and not the supermarket, as they’re organically grown instead of industrially. But if that is not an option, supermarkets will have to do it.
A medium-sized cabbage will probably get you two liters of juice.

As for the ingredients, a medium-sized cabbage and some water are all you’ll need.
First of all, you need to wash the cabbage under a strong water current, making sure it’s cleaned thoroughly. It’s recommended to peel off any unattractive leaves on the surface of the cabbage. Now, put the cabbage on your cutting board, get rid of the stern, and start chopping it. It’s not necessary to be very consistent, but just make sure you’re cutting them into pieces that you can fit into the juicer or blender you’re going to be using.
As for the water, pure water is best for the juice. But you should make sure to boil the water for some time if you’re using tap water, just to get rid of the chlorine and other additives. It’s not necessary in the case of distilled water, however.
Take the most powerful one of your type of blender with a large jug you have and only fill it about two-thirds, as the cabbage will need space to move. Use as much water as you feel is necessary. Everyone has varying preferences when it comes to texture and consistency. You can use smaller blenders as well, but you’ll only be able to do it in smaller quantities. But, whatever the case, just don’t fill the blender all the way through.
Make sure your blender is receiving power and that everything is locked into place, and start blending at the lowest speed and keep it like that for about 10 minutes. After a time, if you start seeing floating chunks of cabbage, you’re going in the right direction. Now, blend at the highest speed for about 10 seconds.
When you’re done blending, pour the mixture into your preferred jars without filling them to the brim, as it’ll expand upon cooling. Now, seal the jars so that it prevents air from getting through. This will start the fermentation process. Leave your jars in a room at around 20 degrees Celsius for about three days to complete the fermentation.
After three days, you need to strain your mixture. If your strainer does a good job, you should have clean and smooth cabbage juice without solid bits and pieces.
Now, all there’s left to do is keep the juice in the refrigerator for some time and serve it cold.
Other Methods of Making Cabbage Juice
If you don’t have a blender, or you don’t want to wait 3 days for cabbage juice, there are other methods you can use to make cabbage juice too.
If you want to have your juice instantly, all you need to do is wash and cut your cabbage according to the size of your juicer’s mouth. Put it in, and run the juicer until it’s thoroughly mixed, and serve it fresh. You can have unfermented cabbage juice with complete assurance that your juicer has extracted all the right nutrients from your cabbage. Make sure always to have it right away if you’re making unfermented juice.
You can also add different vegetables into the mix and even improve the taste. Carrots usually go really well with cabbage, but you can also add celery, apples, lemon, whatever you have.
Mixed Cabbage Juice
Not everyone can appreciate the taste of pure cabbage juice, so adding different vegetables can help.
I have found that cabbage, celery, and carrots can be a great recipe.
All you need for that recipe is
- one-fourth of cabbage,
- 2 celery stalks, and
- 2 carrots,
Mix everything in the juicer.
